Ways to Drink Yerba Mate
TERERE: A perfect drink for sultry summer days,
Terere is the infusion of yerba mate with cold water. To prepare
it, place the yerba in a mate (hollowed out, dried gourd), pour
cold water and drink through a straw (bombilla). To keep your terere
extra refreshing, add ice cubes. This practice is especially popular
in Paraguay. For a pleasantly aromatic infusion, flavor your water
with lime juice, aromatic and medicinal herbs like mint, lemon or
orange rinds, and santa lucia.

EL MATE: To prepare mate, proceed as with Terere,
with the essential difference that water must be very hot, near
the boiling point. To give your mate a special touch of flavor,
add natural herbs such
as mint, anise, or chamomille to the hot water. In many areas, it
is traditional to sweeten mate with honey or sugar.
MATE TEA or MATE COCIDO: “Mate
cocido” is a hot drink traditionally prepared with yerba
mate, burnt sugar and hot water. Once infused by the mate mix, the
water is drained for a sweet, aromatic and flavorful herbal tea.
Mate tea is now conveniently available in sacks, and can be prepared
as any herbal tea. Add milk & sugar to taste.
